INGREDIENTS

  • 1 lobster about 550g

  • 50g Parmesan cheese
  • 50g butter, room temperature

  • 1 tbsp chives, chopped

  • 1 tsp lemon zest, grated

  • 0.5 tsp chilli flakes

ACCESSORIES

  • Bread

  • Pink sparkling wine or Champagne

PREPARATION

Set the oven to 275°. Split the lobster and lightly crush the claws. Remove the intestines and stomach lining. Grate the cheese. Mix the butter with the cheese, chives, lemon zest, and chili flakes. Click the butter onto the lobster.

Gratinate the lobster in the middle of the oven for about 5 minutes. Serve the lobster immediately with pink bubbles.

Serves 2.
