Mix milk, 1 egg, and parmesan. Season with 2 pinches of salt and pepper. Dip the bread slices in the egg mixture and fry them in butter in a frying pan for 2-3 minutes on each side. Sprinkle with herbs.
Bring about 1 liter of water to a boil with 2 teaspoons of salt and vinegar. Poach 2 eggs in boiling water for about 6 minutes. Remove them with a slotted spoon and drain them on paper towels.
Slice the tomatoes. Arrange the rocket, tomatoes, and eggs on the toast. Serve immediately.
